First, let me say, this is one of my husband's FAVORITE foods. Egg rolls. This recipe was inspired by my mother's glorious egg rolls. In her recipe she uses ground beef and fries them in oil (oh yes, so good:). However, for my recipe there is no meat and they are baked to a golden brown with a light crispiness. They were heartily approved by my favorite critics - my hubby and my little guy:)<br />

Ingredients:</h4>

1 Tbsp olive oil<br />
1 small/medium head cabbage<br />
I pkg egg roll wrappers<br />
1 clove, garlic<br />
5 green onions<br />
1/2 cup carrots (shredded - I just guess - it's not an exact science:)<br />
1/4 cup soy sauce<br />
salt and pepper to taste <br />

Instructions:</h4>
1. Preheat oven to 400 F. Wash and remove the outermost layer of cabbage.<br />
2. Slice cabbage - discard hard white center pieces (see photo right).<br />
3. Chop cabbage into small pieces.<br />
4. Heat olive oil in a large pan or wok over medium heat.<br />
5. Put cabbage into pan and let it begin to cook.<br />
6. In a food processor, place carrots, green onions, and garlic. Chop/grind to desired consistency (I make mine into a fine consistency).<br />

7. Place this into the pan and mix with cabbage.<br />
8. Reduce heat to medium-low and cover with lid. Let cook for 15 minutes, stirring occasionally.<br />

10. Fill each egg roll wrapper with approx. 2 Tbsp of mixture.</div>

*I baked mine for 30 minutes and the zucchini still had a little crunch - you don't want to bake it too long or it will be mushy <br />

When you talk about China's notorious "one-child" policy, generally, the American people are appalled. Appalled that a government would put such a practice into law. Appalled that people would intentionally kill their daughters so that their son's could live because a son is worth more than a daughter.<br />

Any of this sound eerily familiar? I can't believe how hypocritical the American populace can be and not even see it. They cry "pro-choice!" A woman should have the right to take the life of a child because it is inconvenient, painful, unwanted. Oh, but it's not actually a child until it breathes it's first breath. And maybe it's not a child until "it" can take care of itself somehow, so after-birth abortion is ok too. Who get's to decide when someone becomes a person anyway? A doctor? You? Me? What if my definition of person is different from yours?<br />
<br />
Although our government does not force you to have an abortion, they do force everyone to pay for it. What happened to MY choice? Why don't I get to choose NOT to pay for or support abortion without being labeled "anti-women's rights?" And, excuse me, but I am more for women's rights than the pro-chioce side. Why? Because I care about the long-term overall health of these women. Pro-choice supporters are only concerned about the moment. The act of abortion is not a long-term or permanent scar, it's a "simple" choice. Maybe the woman wants to pursue a career? Maybe she wants to finish school? Maybe she was raped and doesn't want to have to have a child with someone she did not choose?<br />
<br />
Well, what if the baby forming in these wombs is a female? We're not concerned about her rights because she's not actually a human being? Her rights don't count because she relies on the mother for nourishment and sustaining? We only care about adult women's rights?<br />
<br />
I hate to tell you, but we all rely on someone for life. No man is an island. If you were the only one in the world, you would not live very long because you'd have no reason to live. We've legalized a form of murder. How long until I can kill you just because you made me mad? You are inconvenient to me. You are keeping me from accomplishing what I want so I'm going to get rid of you. How do you feel about that?<br />
<br />
Whether you are a Christian or not, this is an important issue. Every decision and choice has consequences. Be willing to accept those consequences and don't make an innocent child pay for your mistakes or the cruelty of another.<br />

This is what comes when "everyone does what is right in their own eyes." (Judges 21:25) "All we like sheep have gone astray; we have turned -EVERY ONE- to his own way; and the Lord has laid on Him the iniquity of us all.: (Isaiah 53:6) There is hope. Despite the fact that we are all as filthy rags, God has laid all our sins (our lying, stealing, cheating, aborting, killing, etc) on his Son, Jesus Christ. We have new life and a great hope. I found this <a href="http://www.eatingwell.com/recipes/lemon_thins.html" target="_blank">recipe </a>at eatingwell.com. Sometimes they have good recipes and sometimes the recipes I find on there should not be considered "eating well." Nevertheless, I did stumble upon this little gem. I did change one thing however. The original recipe calls for cornstarch, but I never use cornstarch, so I just added a little extra flour. Also, it calls for 1 egg white, but I just through the whole egg in there for more protein. The recipe below reflects this.</div>

Instructions</h3>

<li>Preheat oven to 350°F. Coat 2 baking sheets with cooking spray. </li>
<li>Whisk flour, baking powder and salt in a
mixing bowl. Beat 1/2 cup sugar, butter and oil in another mixing bowl
with an electric mixer on medium speed until fluffy. Add egg,
lemon zest and vanilla; beat until smooth. Beat in lemon juice. Add the
dry ingredients to the wet ingredients and fold in with a rubber spatula
just until combined.</li>
<li>Drop the dough by teaspoonfuls, 2 inches apart, onto the
prepared baking sheets. Place the remaining 1/4 cup sugar in a saucer.
Coat the bottom of a wide-bottomed glass with cooking spray and dip it
in the sugar. Flatten the dough with the glass into 2 1/2-inch circles,
dipping the glass in the sugar each time.</li>
<li>Bake the cookies until they are just starting to brown
around the edges, 8 to 10 minutes. Transfer to a flat surface (not a
rack) to crisp.</li>

I try to do a weekly post of a meatless main dish for various reasons. One reason being that it's a healthy and cheap alternative to a meat dish. However, I do make meat dishes several times a week. I recently made a roasted chicken. I also made two side dishes that I just had to post because they turned out so well. Don't stop reading here, but one of the sides was Brussels sprouts (gasp!). I know that generally people automatically think of Brussels sprouts as the worst tasting vegetable, but it's simply not true! Try this recipe - you'll be surprised. The other side was roasted cauliflower. Cauliflower is a great alternative/substitute for potatoes.</div>

Instructions</h4>

1. Preheat the oven to 350 F </div>

2. Cook lasagna noodles according to package instructions</div>

3. Chop spinach (if desired, you can put in a food processor or blender with a little water to get it very fine)</div>
<div style="text-align: justify;">
4. In a bowl combine egg, ricotta cheese, 2 oz shredded cheese, garlic powder, and spinach </div>
<div style="text-align: justify;">
5. Place a heaping tablespoon of the ricotta mixture onto one noodle at a time. Make sure the ricotta mixture covers the whole noodle (it does not need to be a thick layer). Roll up the noodle and place it into a glass baking dish. Repeat with the remaining noodles.</div>

6. Once all of the noodles have been completed, cover them with sauce and the remaining shredded cheese</div>

7. Bake for 40-50 minutes (depending on how brown you like your cheese, you can cover the dish with foil or a cookie sheet for the first 30 minutes)</div>

Yesterday, my son was especially miserable. He seemed to be getting an ear infection (he kept crying and rubbing his ears all day). Hopefully, his ears stay healthy. Today is my 4th anniversary. I know that's not very long in the grand scheme of things, but so much has happened in these 4 short years. We got married (in Pennsylvania) and moved 11 hours away (to Kentucky) 2 weeks later. We moved into a 500 sq ft apartment for a year and David got a job working 3rd shift at UPS. Then we moved into another 500 sq ft apartment for another 2 1/2 years. We got pregnant and had a son. We named him Tyndale (after <a href="http://www.tyndale.org/DeCoursey/life.html" target="_blank">William Tyndale</a>). The husband graduated seminary and got a new job as a pastor. When he was just over a year old we moved 8 hours away from our Kentucky home back up north to Maryland into a house. We've been here for 5 months. Four months ago we got pregnant again. Two months ago our baby was called home to heaven before we got a chance to meet him. We've laughed. We've cried. We've had some hard times and we've had some wonderful times. </div>

It's that time of year! I ate an entire clove of garlic (covered in honey to make it easier to go down:) and sipped on some lemon water all day. Today I made a tea with <a href="http://www.herballegacy.com/Vance_Medicinal.html" target="_blank">nettles</a>, <a href="http://thepracticalherbalist.com/component/content/article/40-herbal-encyclopedia/102-yarrow-the-wound-healer.html" target="_blank">yarrow,</a> and <a href="http://www.all4naturalhealth.com/slippery-elm-tea.html" target="_blank">slippery elm</a>. I had Tyndale drink some of this tea too - he likes it! I'm already feeling a little better.<br />

Later today I will be making a "garlic lemonade" to help fight off whatever virus I'm coming down with in my chest/throat. <br />

Garlic is a natural antibiotic that is best eaten raw (for the purpose of fighting illness). Garlic can also be used as a <a href="http://www.health.com/health/article/0,,20411348_last,00.html" target="_blank">great prevention</a> for colds (I should have done this before I got this cold:)! <br />

As I meditated on Luke 2, I couldn't help but relate this to how often I too don't leave room for Jesus. I fill my days with stuff. Some of it is important (i.e. changing poopy diapers), but most of it is trivial. I put so many things before Christ, that by the end of the day I haven't spoken a word to Him. I never thanked Him for anything. I never asked Him for His help. I never asked forgiveness for my disobedience of ignoring Him. I never let Him "speak" to me through His written word. And yet, I still manage to fall asleep without correcting that. Oy.<br />
<br />
As a relatively new mom, this has become very heavy on my heart. I know that I need to give God the priority He deserves - both for my spiritual well-being, but also for my son, Tyndale. As parents, we are God's primary representatives to our children. The very first things they learn about God come from you and I. This is extremely humbling if you think about it. I don't want my son's first knowledge about God to be that He's not that important. Or that He doesn't require much attention. Or that He's only interesting on Sundays. I want him to know that God gives me life and breath and that He is my Lord. I want Him to know that I serve Him first above all others - even above daddy. I want him to know that I love God so much that I am willing to make sacrifices for him - even if that means no blog posts, or no leisure reading, or no warm bath - to make time to spend with Him. After all, He made the ultimate sacrifice for me.<br />

I want Tyndale to know that God made that sacrifice for him too.<br />

To use this method of hair cleansing:</div>

Place 1-2 teaspoons (depending on length of hair - I used 2 as I have long and thick hair) of baking soda in a glass and add 1 cup of water. Pour onto hair and massage it into scalp and hair. Rinse. </div>

Then place 1-2 teaspoons of apple cider vinegar into the same glass and add a cup of water. Pour onto hair, focusing on the shaft and ends. Massage into hair and let sit for 1-2 minutes while you shave your legs or whatever else you do in the shower:) Rinse and viola! </div>

Set aside Santa Claus and Christmas trees, the root of the celebration is the miraculous birth of Jesus Christ. Luke 1:67-80 records the birth of John the Baptist (the prophet born to tell of the Messiah's coming - what a task!). His father, Zechariah, sings this song (please take time to read this!):<br />

Wow! His son is called the prophet of the Most High - Jesus Christ the Savior of the world! What boldness and joy John must have experienced in sharing this news! He never backed down despite being scoffed at and disregarded by many.<br />

Oh that I may have such boldness to speak the truth - even if people call me crazy. Why? Because I know, with full assurance, the TRUTH - that Christ was born in a lowly manger to save me (and you!) from eternal punishment. He lived to die. He died on a cross as the payment for my disobedience against the One and Most Holy God. A payment I could never pay myself. I, an imperfect creature who messes up every day and cannot follow all the commands God has given 100%, have been given the most wonderful gift of all - eternal life. Oh how He loves you and me!<br />
<br />
This Christmas, PLEASE take time to think about what God has done for you on the actual Christmas day. In sending His son Jesus Christ, He brought salvation to the world. You're not alone. You don't have to try to be perfect and get it all right on your own. You have HOPE. Hope in Jesus Christ. <br />
